Kitchari Cleanse
Kitchari is a simple & delicious meal that has been used for centuries to rehabilitate the sick (it is what is primarily served in Ayurvedic Hospitals) and to maintain health & longevity. Due to its easy digestibility and high nutritional content, it is the perfect food for convalescence, growing children, ailing elders, and anyone who wants to eat a highly nourishing, yet light food. It’s also perfect for a cleanse.
Kitchari Cleanse: Simply eat kitchari for each meal (yes, including breakfast) for at least 3 days (optimally at least one week) and you’ll see & feel the difference!
How to Make Kitchari
Ingredients - Serves 4
2 TB ghee or coconut oil
2 TSP mustard seeds
2 TSP cumin seeds
2 TSP coriander seeds
2 TSP ground turmeric
1 TSP sea salt
1 TSP black pepper
1 cup basmati rice (try to soak for at least 6 hours and then thoroughly rinse)
2 cups split mung beans (soak and rinse, just like the rice)
6 cups filtered water
Fresh herbs of your choice to top with such as cilantro or parsley
In a large pot, melt the ghee or coconut oil and add all the seeds, stir until the mustard seeds begin to make a popping sound. Add the turmeric, rice and mung beans and stir until coated. Then pour in the water, stir well, and bring to a simmer. Cover and cook for 20 - 30 minutes until soft. Sprinkle fresh herbs and freshly ground black pepper on top.
